“Mochitsuki” is the traditional ceremonial pounding of glutinous rice into mochi; soft, chewy rice cakes that hold deep symbolic meaning in Japanese culture. Steamed rice is placed into a large wooden mortar, or usu, and rhythmically pounded with a heavy wooden mallet, or kine, while a second person turns and folds the rice between strikes.
