Celebrates the Art of French Pâtisserie

This month, Bangkok Baking Company (BBCO) at JW Marriott Hotel Bangkok presents the timeless artistry of French pâtisserie through a limited-edition selection of handcrafted desserts inspired by the cafés and neighbourhood bakeries that have long defined France’s rich pastry tradition.

Available – 31 July 2026, the desserts, curated by Executive Pastry Chef O Phensiri Chotkaeo, reimagine beloved classics using premium ingredients and contemporary techniques while remaining true to their heritage. Evoking the charm of leisurely afternoons in Parisian cafés, where beautifully crafted pastries are as much a part of the experience as the conversations shared around them, each creation celebrates the balance of flavor and texture that defines French pâtisserie.

Among the highlights is the Caramel Hazelnut Croquembouche, an elegant take on one of France’s most iconic celebratory desserts. Crisp miniature choux are filled with smooth caramel pastry cream before being paired with hazelnut croustillant, hazelnut praline mousse, hazelnut dacquoise, and Dulcey whipped ganache, creating a dessert that is both visually striking and richly indulgent.

Chocolate lovers will appreciate the Chocolate Marquise Cake, where layers of French chocolate cake, velvety chocolate marquise, and glossy chocolate ganache are finished with an assortment of premium French chocolates for an intensely satisfying experience.

The Malted Milk Opera Cake offers a contemporary twist on the beloved French classic. Built upon a delicate Joconde sponge, it combines malted mascarpone cream with dark chocolate ganache before being finished with a peanut butter-scented chocolate glaze, adding a subtle modern touch.

Fruit takes center stage in the Raspberry Pear Frangipane Tart, where a buttery brown sugar tart is layered with almond cream, raspberry jam, pear Bavarois, and pear-raspberry confit, bringing together vibrant fruit flavors.

Completing the selection is the Strawberry Peach Charlotte, a light and elegant dessert featuring delicate ladyfingers surrounding strawberry crémeux, peach mousse, peach-strawberry confit, and Chantilly cream. Beautifully balanced and refreshingly delicate, it offers a fitting finale to the collection.

Available exclusively throughout July, each handcrafted dessert is priced at THB 250 net per piece, making it easy to enjoy a refined afternoon indulgence with coffee or tea or to take home and share with family and friends.
