Elements, inspired by Ciel Bleu, the renowned Michelin one-star restaurant at The Okura Prestige Bangkok, is delighted to announce the launch of its new seasonal “Autumn Guestronomic Dining Journey.” Under the masterful guidance of Chef Gerard Villaret Horcajo, this flavourful tasting menu represents a celebration of the finest autumnal produce, meticulously crafted into a transcendent culinary narrative. In this latest evolution of its gastronomic repertoire, Elements, inspired by Ciel Bleu elevates the seasonal bounty, presenting an epicurean experience that is both sophisticated and deeply satisfying. Chef Gerard’s philosophy, rooted in a seamless blend of French technique and subtle Japanese influence, brings forth a menu that us a true reflection of contemporary fine dining.
The journey begins with the ‘Wild caught Himi Kan-Buri,’ a delicate composition that marries the pristine flavours of yellowtail with the subtle acidity of Kabosu Dashi, the creamy nuance of Shungiku emulsion, and Itoshima oyster. It is a brilliant opening, setting a tone of elegant precision. Following this, the ‘Homemade Yakisoba Noodles’ are presented as an elevated interpretation of a classic, enriched with the luxurious texture of Murasaki uni, Hojiso, and crisp Myoga. Indulge in a rich tapestry of flavours with the ‘Jean Larnaudie Foie Gras,’ a masterful autumnal composition, counterbalanced by the tartness of Artichokes, a Dashi vinegar glaze, and the deep, nutty noted of Mimolette Cheese and Dates.
The highlight of the main course presents a choice between two exceptional offerings. Guests may savour the ‘Koji Aged Free Range Poularde,’ a dish showcasing tender chicken paired with earthy Morels bathed in a Vin Jaune sauce, Kabocha squash and crispy chicken skin. Alternatively, guest can indulge in the exquisite ‘Hokkaido Wagyu A4 Striploin,’ served alongside vibrant Radicchio and dry aged beetroot, a bold Black Garlic Yakiniku, and the sharpness of Egoma mustard.
As sweet crescendo awaits with a choice of two dessert. The classic comfort of ‘Tonka Bean Crème Caramel’ is reimagined with Roasted Pecan, a sweet Satsumaimo caramel, and a fig leaf ice cream that offers a uniquely fresh finish. For a lighter, fruit-forward conclusion, the ‘Yame Persimon’ is paired with a vibrant Cha-Am Lemon Custard, delicate vanilla chantilly, and a crisp chestnut sablé.
In addition to the tasting journey, a bespoke à la carte menu is available between Wednesday to Friday, allowing guests to curate their own experience. Discover the delicate balance of the ‘Langoustine Mi-Cuit’ with a vibrant winter gazpacho, or a savour the opulence of ‘Wagyu A4 Beef Tartare’ topped with Oscietra Caviar and a unique Beurre Blanc ice cream. Highlights include the rich ‘Foie Gras Crème Brûlée’ with grilled unagi, and the stunningly refined ‘Poached Brittany Blue Lobster’ with a silky Hollandaise Sabayon. The ‘Autumn Guestronomic Dining Journey’ at Elements, inspired by Ciel Bleu is an exploration of flavour, a homage to the season, and an indelible dining experience, all presented within the refined ambience of Bangkok’s most elegant destination.
