In Thailand, Beyond the Menu showcases three distinctive experiences at Terra Ananta (Haoma), Cadence by Dan Bark and 80/20, each offering a unique opportunity to connect with renowned chefs and experience the creativity, culture and craftsmanship that shape their culinary philosophy. From an exclusive overnight retreat immersed in nature, to an intimate evening inside a chef’s private home, and a hands-on journey through the flavours of Bangkok’s Chinatown, each experience invites guests to step into the world behind the menu.

Terra Ananta (Haoma): The Wilderness Table – Forest & Fire
Chef Deepankar Khosla invites guests beyond the restaurant and into the natural surroundings that inspire his culinary philosophy through The Wilderness Table: Forest & Fire, an exclusive overnight experience at Terra Ananta, his private farmhouse retreat in Kanchanaburi.
Limited to just six guests, the approximately 24-hour journey combines nature, storytelling and an open-fire dining experience featuring locally sourced, seasonal and foraged ingredients. Guests will share a communal feast while learning about the land, ingredients and philosophy that underpin Chef Khosla’s approach to sustainability and gastronomy. The experience also includes breakfast and an optional sunrise hike before returning to Bangkok.
Taking place on 19 September 2026, the experience offers a rare opportunity to experience Chef Khosla’s culinary world beyond the traditional dining room. Haoma is recognised with one MICHELIN Star and one MICHELIN Green Star and has earned international recognition for its sustainability-led approach.
Cadence by Dan Bark: The Time Machine
For one evening, Chef Dan Bark and Fay Tragoolvongse open the doors to their private kitchen and living space for The Time Machine, an intimate experience limited to just ten guests.
Designed to feel less like a restaurant visit at the chef secret dining area and more like an evening shared among friends, the experience brings together food, conversation and personal reflections that reveal the inspirations, memories and defining moments behind the couple’s culinary journey. Guests will gain rare insight into the people and stories behind one of Bangkok’s most celebrated dining destinations.
Taking place on 17 October 2026, The Time Machine offers a unique opportunity to connect with the personalities behind the restaurant in an intimate and highly personal setting. Led by Chef Dan Bark, Cadence earned and retained one MICHELIN Star (2025).
80/20: The Culinary Explorer
At 80/20, Chef Thav Phouthavong welcomes guests directly into the kitchen for The Culinary Explorer, a hands-on experience that explores the techniques, ingredients and cultural influences behind the restaurant’s cuisine.
Working alongside Chef Thav and his team, guests will learn cooking and plating techniques before enjoying a multi-course tasting menu inspired by the vibrant flavours and energy of Bangkok’s Chinatown. Throughout the experience, Chef Thav shares the stories behind the ingredients, sourcing philosophy and cultural influences that shape each creation, offering a deeper appreciation of how exceptional dining is imagined, crafted and shared.
Taking place on 25 October 2026, The Culinary Explorer provides guests with a rare opportunity to experience the creative journey from kitchen to table. 80/20 holds one MICHELIN Star (2025).
