Winning challenger’s dishes to debut at The Bay Restaurant from 16 March

Dusit Thani Pattaya is celebrating a major culinary achievement after its Executive Chef, Chef Tofu, was named ‘Winning Challenger’ following a dramatic one-on-one battle against British celebrity chef Martin Blunos on the acclaimed television programme Iron Chef Thailand, one of the country’s most prestigious culinary competitions. The episode aired on 7 March 2026.
To mark the victory, the hotel’s signature seaside venue The Bay Restaurant will present the exact dishes that secured Chef Tofu’s win, allowing guests to experience the competition-winning creations firsthand from 16 March.
Created under intense pressure in the Iron Chef kitchen, the dishes highlight Chef Tofu’s creative reinterpretation of classic European cuisine, combining refined technique with bold flavours and unexpected ingredients. A la carte dishes will be available from THB 299 net.
Highlights from the menu include Oxtail Express, an inventive reimagining of the Italian classic Pappardelle al Ragù di Manzo. Instead of serving pasta and sauce separately, Chef Tofu infuses the rich ragù directly into the pasta itself, allowing diners to experience the full depth of flavour in a perfectly balanced single bite.
Oxtail appears again in Oxtail “BUCO,” Chef Tofu’s modern interpretation of the traditional Italian dish Ossobuco. By replacing the customary veal shank with oxtail, he transforms a humble ingredient into an elegant slow-braised dish that highlights the richness and complexity of the cut.
Drawing inspiration from Spain, Pomegranate Shank Paella offers a bold alternative to the traditional seafood version of the famous rice dish. Lamb shank is paired with rice infused with pomegranate juice and red wine, creating a balance of sweet, tart, and savoury notes.
French technique is showcased in Quail Ballotine, where the delicate bird is carefully deboned and prepared into a refined ballotine, elevating the modest ingredient into an elegant fine-dining dish.
The menu also features several additional creations inspired by the competition, including the slow-cooked Mediterranean-style Lamb in Jar and the playful savoury waffle creation Sage of Waffle, further showcasing Chef Tofu’s creative approach to reinterpreting familiar flavours.

For a more immersive experience, the restaurant will also host a special Chef’s Table evening on 27 March 2026, featuring a six-course wine-pairing menu showcasing Chef Tofu’s signature dishes from the competition.
